Our famous Ludacrisp Grain Free Granola Recipe

Ok so since announcing we are no longer selling our granola, I have been inundated with messages from those of you who are despacito for your granola fix.

Imma let you in on a secret. This is kind of like The Colonel giving up his 11 secret herbs and spices, but feels like it’s the right thing to do. I’ll use approximate measurements, and have adapted this to more of a DIY version, rather than the giant commercial batches we’re used to making. so you can always adjust to what you have on hand, or feel free to sub in different nuts/seeds/whatever floats your GD boat!

Ingredients List

Dry:

1/2 cup pumpkin seeds

1 cup linseed

2.5 cups sunflower seeds

2.5 cups unsalted roasted peanuts

4 cups coconut flakes

Paste:

250g pitted dates

100g unsalted roasted nutes (almonds, cashews, pecans etc)

20g organic unrefined coconut oil

pinch of pink salt

2 tsp cinnamon

1 tsp vanilla

Method

  1. Pre-heat oven to 160c
  2. Soak your dates in boiling water for at least 20mins
  3. pour all your dry ingredients into a bowl and mix well by hand
  4. once your dates are soft, drain the water and put into a food processor with remaining paste ingredients
  5. blend until smooth
  6. put your date paste in with your dry ingredients, and mix well by hand, ensuring everything is well coated. You may need to adjust slightly – if it’s too wet, throw some more coconut in there, if it’s too dry, add a little bit of coconut oil in until you get a nice consistency
  7. Line a baking tray or 2 with baking paper, then spread your mix in an even layer
  8. your baking time will depend on your oven, so keep an eye (and nose) out for any sign of burning. I’d start with 10 mins or until you have a nice golden colour and you can smell the granola is nice and toasty
  9. remove from the oven and allow to cool in the tray – this is where your granola will continue to cook from the residual heat and then eventually cool down and become crunchy
  10. tip into a bowl and break up any chunks with your hands until you reach your desired consistency
  11. store in an air tight container/jar out of direct sunlight.
  12. eat as is, with greek yoghurt and fruit or on top of ice cream.

Note – This will not taste exactly like Ludacrisp, due to to Luda being made in a dehydrator, and in commercial quantities, but this is as close as you’re gonna get!
